I found a poem I wrote on August 20, 1981. I was a freshman in college and dating Mark.
I Shall Love You Faithfully
I shall love you as faithfully
As the morning sun shall rise.
I shall love you tenderly
With soul and heart and eyes.
I shall greet each day with laughter
For as long as I am your wife.

Wow. A whole year has gone by since I’ve posted anything. Thought I’d try to get back into blogging some. Winter is a great time for staying in and using the computer anyway. We have a beautiful blanket of snow here–at least 4 inches. I measured it at about 6:30 this morning on the patio area out back, and it snowed a little more after that. I rarely sleep late anymore; I do enjoy a good nap, though! Tried sledding, but we needed to pack the snow down more, so it didn’t work well and I had banana bread baking in the oven that I had to tend to. (It turned out to be delicious, by the way.)
I’ve been re-watching Season 5 of Lost with my daughter, Avery. I had forgotten just how much happened last season! Wondering if “Locke” is really the guy we saw on the beach with Jacob who was looking for a “loophole” so he could kill him. And did the hydrogen bomb explosion work? Will the show end with everyone remembering nothing about the island, but maybe somehow meeting anyway thinking that everyone somehow seems vaguely familiar? I guess we will have to wait a few more days to begin finding out.

Blessings From the Kentucky Ice Storm
Piping hot, soft, tasty baked potatoes cooked in the fireplace
Having time to crochet!
Realizing that no matter how bad you think you might have it, there is always someone worse off than you, so there is no room for complaining!
Inventing a new dessert–waffle-shaped brownies with powdered sugar or chocolate syrup and whipped cream! (Just make the brownie mix according to the package directions, spoon into a waffle iron, and cook as you would for waffles. We had to find ways to cook since the generator we are using couldn’t power our oven or microwave. We will have this again whether the power is off or not! Maybe with a scoop of vanilla ice cream . . .)

Listening to all the kind callers on the radio who just wanted to find someone to help

I have been blessed by a tremendously long, restful, and thoroughly enjoyable Christmas break! I love the challenges presented by my job (and there are many!), but I also love that I get time to de-stress! It’s a great life!

Remember how, just before 2000 came in, everyone was concerned about Y2K, and all we heard about was the new millenium? Well FAST forward nine years! How could the time get away so quickly? My girls were 8 and 5 then. They made a time capsule to be opened in ten years, so I guess next year we will get to enjoy that. I can’t remember what they put in it really–cassette tapes of them speaking, maybe some drawings, or a letter. It will be fun to get it out next year.
Here are the highlights of my 2008:
Kelsey got her full-fledged driver’s license
I received a teaching award
Mission trip to Texas
Kelsey went to Bellarmine for Governor’s Scholars Program–I didn’t see her for 5 weeks!
Avery got her braces off
Mark took up bicycling
Cruise to Mexico
25th wedding anniversary
I moved to 4th grade
Mercer Band in State AAAA Finals at Papa John’s Stadium

I had some teacher friends over today, so I made tortilla roll-ups. They came out pretty good, so I thought I’d share the recipe.

Tortilla Roll-Ups
2 8-oz. packages of Neufatchel cheese
3 green onions, chopped
1 slice of ham, chopped (I used “Black Forest” from the Kroger deli.)
1/2 cup of black olives, chopped
2 sun-dried tomatoes, chopped
soft flour tortillas (large size)
Place the cheese in a mixing bowl. Allow it to soften while you chop the other ingredients. Add the ham, onions, olives, and tomatoes to the mixing bowl. Beat until well blended. Spread some of the mixture onto a tortilla. Roll it up tightly. Repeat with 1-2 other tortillas, depending on how thick you spread the Neufatchel cheese mixture. Slice into rounds, about 1/2 half inch thick. Enjoy!
